Vegetarian Fried Egg Rolls

Vegetarian egg rolls


  • 1 package of egg roll wrappers (approximately 12 wrappers)
  • 2 cups shredded cabbage
  • 1 cup shredded carrots
  • 1 cup bean sprouts
  • 1/2 cup finely chopped green onions
  • 1/4 cup finely chopped mushrooms
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil for frying


  1. Prepare the Filling:
    • In a large bowl, combine shredded cabbage, shredded carrots, bean sprouts, green onions, mushrooms, and minced garlic.
    • In a small bowl, mix together soy sauce, hoisin sauce, sesame oil, sugar, salt, and black pepper.
  2. Cook the Filling:
    • Heat a large skillet or wok over medium-high heat. Add a drizzle of vegetable oil.
    • Add the vegetable mixture to the skillet and stir-fry for 3-4 minutes until vegetables are tender-crisp.
    • Pour the sauce mixture over the vegetables and stir to combine. Cook for an additional 1-2 minutes. Remove from heat and let cool slightly.
  3. Assemble the Egg Rolls:
    • Lay an egg roll wrapper on a clean surface with one corner pointing towards you (diamond shape).
    • Place 2-3 tablespoons of the vegetable filling in the center of the wrapper.
    • Fold the bottom corner over the filling, then fold in the sides, and roll up tightly. Moisten the top corner with a little water to seal the egg roll.
  4. Fry the Egg Rolls:
    • In a large skillet or deep fryer, heat vegetable oil to 350°F (175°C).
    • Carefully add a few egg rolls at a time to the hot oil, seam side down. Fry until golden brown and crispy, turning occasionally, about 3-4 minutes.
    • Remove the egg rolls with a slotted spoon and drain on paper towels.
  5. Serve and Enjoy:
    • Serve hot with your favorite dipping sauce, such as sweet and sour sauce, plum sauce, or soy sauce with chili paste.

Note: These egg rolls can be frozen before frying. To cook from frozen, fry at a slightly lower temperature for a few minutes longer until heated through and crispy.
