In this recipe, we will guide you through the steps to create this traditional Korean dish that will surely impress your family and friends.

Ingredients:

  • 2 pounds (900g) beef short ribs
  • 1 onion, thinly sliced
  • 4 cloves of garlic, minced
  • 1 thumb-sized ginger, peeled and minced
  • 4 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon rice wine (mirin)
  • 1 teaspoon black pepper
  • 2 cups beef broth
  • 2 green onions, chopped (for garnish)
  • Sesame seeds (for garnish)

Instructions:

  1. Prepare the Beef Ribs:
    • Rinse the beef short ribs under cold water and pat them dry with paper towels.
    • If desired, you can cut the ribs into individual pieces for easier serving.
  2. Marinate the Ribs:
    • In a bowl, combine minced garlic, minced ginger, soy sauce, brown sugar, sesame oil, rice wine, and black pepper.
    • Place the beef short ribs in a large ziplock bag or a bowl, and pour the marinade over the ribs.
    • Massage the marinade into the ribs, ensuring they are evenly coated.
    • Seal the bag or cover the bowl with plastic wrap and let the ribs marinate in the refrigerator for at least 2 hours, or overnight for best results.
  3. Cook the Ribs:
    • Preheat your oven to 325°F (165°C).
    • Heat a large oven-safe pot or Dutch oven over medium-high heat.
    • Remove the ribs from the marinade, reserving the marinade for later use.
    • Sear the ribs in the hot pot until browned on all sides, about 2-3 minutes per side.
    • Once browned, remove the ribs from the pot and set them aside.
  4. Prepare the Sauce:
    • In the same pot, add sliced onions and cook until they become translucent and slightly caramelized.
    • Add the reserved marinade to the pot and cook for a few minutes to let the flavors meld together.
    • Pour in the beef broth and stir well.
  5. Braise the Ribs:
    • Return the seared beef short ribs to the pot, making sure they are submerged in the sauce.
    • Cover the pot with a lid and transfer it to the preheated oven.
    • Allow the ribs to braise in the oven for approximately 2.5 to 3 hours, or until the meat becomes tender and starts to fall off the bone.
  6. Serve:
    • Remove the pot from the oven and carefully uncover it.
    • Using tongs, transfer the braised beef short ribs to a serving dish.
    • Garnish with chopped green onions and sprinkle with sesame seeds.
    • Serve hot with steamed rice and your favorite side dishes.
