Tofu Vegetables

Instructions:

  1. Heat the cooking oil in a wok or large skillet over medium-high heat.
  2. Add the minced garlic, chopped lemongrass, and sliced chilies to the pan. Stir-fry for about 1 minute until fragrant.
  3. Add the tofu cubes to the pan and cook for 3-4 minutes, stirring occasionally, until they start to brown.
  4. Add the sliced bell pepper, julienned carrot, snow peas, and mushrooms to the pan. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
  5. In a small bowl, mix together the soy sauce, oyster sauce (if using), sugar, salt, and pepper. Pour the sauce mixture over the tofu and vegetables in the pan. Stir well to coat everything evenly.
  6. Continue to cook for another 2-3 minutes until the sauce thickens slightly and coats the tofu and vegetables.
  7. Remove from heat and garnish with fresh cilantro.
  8. Serve hot with steamed rice or as a side dish.
